Tae Guan Yin also known as the Iron Mercy Goddess, is the teas name and also the Tea leafs specimen name.  The tea categorizes into fermentation tea, and it is very delicate to the throat.  Tae Guan Yin is made into a wad of ball by hand or machine then put into the steam and cook for a long time.  This is how Tae Guan Yin gets its special taste.  This method is not usable on other tea leaves, only Tae Guan Yin.  This manufacturing technical uses a lot of human labor.  Not many tea leaves like Tae Guan Yin need long roasting time.
